Here is the move that nobody expects. Instead of writing the quote in a card, you can put the whole birthday message in an opening crawl and play it on the TV when they walk in.
I do this every year now. Open the Star Wars Crawl Creator, type something like "A long time ago, on a Tuesday far, far away, [Name] turned 40," pick the music, and export the video. It takes about two minutes and it lands far better than a card. Drop the birthday person's name in, keep it short, and let the yellow text do the work.
